Double-Baked Mashed Potato Recipe

I made this last night and it was delish! I had made potato skins for the super bowl and frozen the extra potato that I had scraped from the skins. I've been going through my freezer this week and trying to use up what is in there - a Spring cleaning of sorts! I made this Taste of Home recipe last night with some salmon and asparagus (a typical Mueller week-night dish). It was delish! I lightened it up with Fat Free Sour Cream, 2% shredded cheddar, light butter, NO bacon and NO milk - it turned out great!! Here is the recipe.
