Margarita Cupcake Recipe!

Ingredients:
10 oz margarita bottled mix
3 oz. tequila (good quality, silver distilled)
white boxed cake mix (betty crocker super moist)
3 egg whites
2 TB vegetable oil
1 TB lime zest

Instructions:
Combine margarita mix with the tequila. You will only use 1 1/4 cup of this mixture* (the rest you can drink!) It is really important that you only use this amount for the cupcakes because if you use more, the wrapper won't stick!!!

Add all other ingredients to margarita and beat on low for 30 seconds, then on medium for 2 minutes. Fill muffin cups about 2/3 full. Bake on 350 degrees for 15-20 minutes.

Some people fill the cupcakes with lime curd.


Lime Buttercream Frosting
Ingredients:
1 stick softened unsalted butter
4 cups powdered sugar
1/8 Tsp of salt
3 TB lime juice

Instructions:
Some people use green food coloring in the frosting. Others put a "sugar rim" around the edges of the cupcake. I have usedlime jelly bellies to decorate them and candied limes from the store as well!
