Mama Joan's Meatballs!


My mom didn't cook a whole lot of things but there was some basic recipes that she claimed over the years. One of them was her "No Mess Meatball". LOL. I actually remember when I got this recipe from her. It was in 2003 when I was in college and it was my first time making dinner for my boyfriend... I had to impress! The meatballs have yet to let me down. I made them for Dave in a healthier version by using turkey instead of ground beef and they turned out fantastically!

Recipe:

Stir Together
1 cup unseasoned bread crumbs
3/4 cup of Parmesan cheese, finely grated
1/2 cup whole milk (I used skim)
1/2 cup low-sodium beef broth (I used regular)
1/2 cup chopped fresh parsley
3 eggs, beaten
2 T dried oregano
1 T garlic, minced
1 T kosher salt
1 T ground black pepper
2 t. dried basil
1 t. crushed red pepper flakes
pinch of nutmeg

Add; Shape
2 lb. ground chuck (or turkey)

Cover bottom of the pan
1 cup low-sodium beef broth

Preheat oven to 450

Stir together all ingredients (except the meat) in large mixing bowl

Add the meat and mix together thoroughly. Using a scoop or 2 spoons to shape mixture into 2" round balls. Coat dish (pyrex, deep baking sheet, roasting pan) with nonstick spray. Space meatballs on the pan so they aren't touching.

Cover bottom of pan with beef broth. Bake for 25 minutes uncovered until meatballs are just cooked through. Any juices left over, reserve for sauce.

  3. Oh Emily, this entry made me smile. Though your mother claimed not to be a cook, some of my favorite recipes are recipes she shared with me. She always entertained beautifully! This is one of her recipes I do not have, but will definitely try.
    Her chicken with swiss cheese is my go to recipe for impromptu company. Ben says if you have her recipe for bourbon balls he would love to have it - they definitely made an impression!

  4. Oh my gosh! I am shocked that she even made a sweet! That must have been when I was too little too remember - HA! I will definitely send your way if I get my hands on it :) I wonder if I have that chicken and swiss recipe... hmmm... I guess she kept to the best of the best recipes and didn't play around! ha!

  5. We made this last night & loved it! They were so good!! (and spicy!). I almost halved the recipe, but glad I didn't because there were enough for leftovers and plenty to freeze for another night!
