My new favorite blog is Katheats. My friend Lauren sent it to me for the obvious reason, she knew I'd love it! The other day she mad ea post about a work lunch she was at. They made a sweet potato taco. Yes, I know, so strange.... but really... not! My favorite restaurant in my neighborhood is Zada Jane's and they make a delicious sweet potato, black bean and Monterrey jack quesadilla! I HAD to try it and I loved it!! So I of course, loved this lunch station where they topped their sweet potato tacos with cilantro, sour cream, avocado, and all the fixins! :) YUM! I am going to have to try to make this one at home. I LOVE sweet potatoes!

Pewter Rose used to have a sweet potato/black bean quesadilla on their brunch menu, but they don't have it anymore. I will have to try it at Zada Jane's!
ReplyDeleteI totally recommend it! They serve it with this apple/cinnamon sauce but it tastes great with sour cream too (i love sour cream, a little too much sometimes! ha!)
