Florentine Frittata




So Dave and I have been doing two different whole body cleanses over the past few weeks and I am just finishing up mine. I can only eat veggies really so I searched the cookbooks and found a great alternative to all the salads I'd been eating. Its from cooking light so it's a healthy one too!

Florentine Frittata
2T   water
1/2t dried basil
1/2t  black pepper
1/4t  salt
1/4t  dried oregano
1 16oz. egg substitute
1 10oz. pkg. frozen chopped spinach, thawed and squeezed dry
2T  unsalted butter
2c  thinly sliced vadalia onion
2c  frozen hash browns
1 7oz. bottle of roasted red peppers (if you can't find this at the store, which you will not find them at Walmart but perhaps Harris Teeter, you can put them under the broiler in a dish with a 1/2 cup of water in the bottom and cover it for 10-20 min depending on your oven's speed, mines slow! they will soften and they ll be ready wen the peels start coming off)
3/4c  crumbled feta cheese

combine first 7 ingredients in a bowl and set aside
melt butter in a cast iron skillet or a non stick skillet
add onion and saute for 5 min
add hash browns and saute for 9 min, stirring
pour egg mixture in and let it set up or approx 7 min, eggs should become firm and arrange the peppers on the top
preheat broiler
cover pan's handle with aluminum foil
sprinkle dish with feta
broil for 5 min or until cheese has browned slightly

great with a sald tossed with balsamic dressing
