Beth's, make ya wanna throw a fiesta, Taco Soup


Wow this snow has gotten me in the mood for some cozy taco soup! I got this soup recipe from Dave's mom and I'm so glad that it's an easy one to throw together. And literally, you do, just throw it all in a big pot and simmer for 2 hours. Plus, you can use chicken or ground turkey as a healthier alternative to the ground beef. And what I love most is that there's no picky fresh ingredients, it's all packaged or canned! I've had the items on my shelves for a while just waiting to be made so I broke them out last night! It's a staple to keep around the kitchen :) And boy did it make for a lot, thank goodness it's freezer friendly! All in all, it is a great winter recipe!


TACO SOUP
Ingredients:

1 lb of lean ground beef
2 packages of original Ranch Dressing
2 packages of Taco Seasoning (mild)
2 cans of Kidney Beans (undrained)
2 cans of Pinto Beans (undrained)
2 cans of Diced Tomatoes with chilies (or else just diced tomatoes)
2 cans of Black Beans (undrained)
2 cans of Stewed Tomatoes (undrained)
2 cans of White Corn (undrained)
2 cups of water

COOKING INSTRUCTIONS:

Fry the hamburger well done in a skillet and drain the fat.
Place the cooked hamburger in a large pot.

Add to the hamburger the 2 packages of Ranch Dressing and Taco Seasoning and mix together thoroughly

Open all the cans and pour into the hamburger mixture. Do not drain any of the juices off but add along with the beans.

Add the 2 cups of water and stir all together.

Cook on low-medium low flame for 2 hours stirring occasionally. Make sure you cover the pot while cooking.

Serve hot and add to the top of each individual bowl (if desired) small bite-size Taco chips and some grated cheddar cheese. Crush the chips up in soup if you like. I also like to put sour cream on top - because I LOVE sour cream!! :)

This dish is good with a toasted cheese sandwich or quesadilla on the side.

  1. Can I cook this in a crock pot or should it be cooked on the stove top because of the stirring?

  2. You can definitely cook this in a crock pot!! It really doesn't require much stiring at all. However you may need to cut it in half depending on the size of your crockpot but I definitely think it would work just fine!
