When we were in Pittsboro last weekend we had breakfast at the Belted Goat at Fearrington Village. I had THE best yogurt parfait there! So naturally, I wanted to recreate it. I got gluten free granola, Chobani lemon greek yogurt and jam. I wasn't a fan of greek yogurt until I had it at the Goat! This turned out great however I think next time I will use a tsp of blueberry or raspberry jam..... those flavors would go better with the lemon I think. You use just a sprinkle, about a 1/4 cup of the granola. And of course, use one container of Chobani. I was hoping that I would like this so much that I could start making it ahead of time in jelly jars for work week breakfasts.
