Skinny Taste Zucchini Lasagna
I made this dish on Tuesday night. It was really good! However, it does take some time and it's best to make on, like, a Sunday afternoon. The recipe is here. Here are my pointers:
-My zucchini was smaller than what Skinny Taste used so I doubled up on the amount I put in there so that it would cover the dish twice.
-Broil the zucchini until it is floppy and translucent. Everyone's oven is different - I broiled mine on High for 10 minutes on each side and the dish turned out perfectly.
-Insetad of letting the sauce simmer down for 45 minutes (because who has time for that?) I cranked the heat up and boiled off the excess water. It turned out great!
-When the dish comes out the oven it will have liquid around the edges but that's okay because you let it sit for 10 minutes and it goes away.
