Grilled Shrimp Skewers over White Bean Salad

Trader Joe's has the best cilantro lime shrimp skewers! They come frozen and already on the skewers! They were delicious.  This dish is only about 200 calories! Healthy - love it!





Mediterranean Bean Salad
Ingredients:
1 tsp. lemon zest
1/3 cup lemon juice
3 T evoo
1 T dried oregano
2 T chopped fresh sage
2 T chopped fresh chives
1 t pepper
1/2 t salt
2 15 oz. cans of cannellini beans
12 quartered cherry tomatoes
1 cup diced celery

Preparation:
Combine zest, juice, oil, oregano, sage, chives, pepper and salt in large bowl.  Reserve 2 T of dressing and set aside.  Add beans, tomatoes and celery in dressing. Toss.

Cook shrimp on either side on grill for 2 minutes.

To serve place skewers over beans and pour the rest of the dressing over the shrimp.


I whipped up a side salad with mixed greens, homemade balsamic dressing, Trader Joe's kalamata olives and garbanzo salad and herbed feta cheese.
