My "book club" (or at least that's what we tell the husbands and boyfriends) met on Monday night as we meet every month - bring books, food and gossip! I requested that we have a Saint Patty's day theme... and I made the main dish of Shepherd's Pie. Here is the recipe I put together:
Ingredients:
2 bags of Frozen (above) OreIda Steam n' Mash - red potatoes
2 tablespoons fat free sour cream
4 tables spoons butter
1 cup mild shredded cheddar cheese
2 pounds extra lean ground beef
2 bags frozen veggies (chopped mix of corn, beans, carrots, lima beans, etc), thawed
2 cans of french cut green beans - drained
6 ounces beef broth
salt/pepper to taste on each ingredient
3 garlic cloves, minced (I used the already minced bottled kind)
Directions:
1. Skillet - Brown Beef and Drain
2. Sauce pan - Prepare veggies as says on bag, add beef broth and garlic
3. Microwave - each bag of potatoes for 10 minutes each
4. Once veggies are finished cooking, add beef and simmer on low
5. Once potatoes are both prepared, open and put into a large bowl, add butter and sour cream, mash to your liking
6. Pour the beef/veggie combo into the bottom of a large and deep baking dish
7. Top with 2 cans of drained green beans (creating a second layer)
8. Top with potatoes and spread over entire dish
9. Top with cheese
10. Broil on Hi until cheese is bubbling on top
Serve and enjoy! :)
