Elly's Pimento Cheese

So I have never made Pimento Cheese before but love it and have for my whole life! My BFF Elly does too and gave me her recipe on Friday which was basically just the ingredients but no measurements lol. I had everything to make it at home and could not wait to try it out as I know it will be a stable recipe to keep in my big book of tricks! Dave and I both loved it, here are the measurements I broke it down to... Elly suggested putting it on celery and Dave loved it both grilled on sourdough bread and on pita chips...

2 cups sharp cheddar cheese
1 tablespoon Dijon mustard
1.5 tablespoon pimentos
Dash of cayenne
1/2 c mayo.... Stir and add more as needed to coat the cheese mixture
