My stand by "impress your man" recipe

If you don't cook or want to try cooking to impress someone - THIS IS the best recipe for that! I made it for Dave and he's still around so I know, it's a keeper. He also raved about it for weeks when in reality, it's one of the easiest recipes I own and there is NO oven required! Amazing, I know. I got it from thenest.com, couples website, a while ago but when I went back to find it - it wasn't there. Such a shame. Luckily you've got me to share it with you instead, hehe!

Salmon and Sun-Dried Tomato Pasta

ingredients:
5c medium bow tie pasta (basically 12oz)
12c boiling water

1 TB cooking oil (i used olive oil but you can use vegetable oil if you don't have any)
1 sm red onion
2 garlic cloves, minced or 1/2 tsp of powder

1c whipping cream
1/3c prepared chicken broth

1lb salmon fillet, skin removed, halved (easiest if you ask the butcher or your man to remove the skin for you)

2c fresh spinach leaves, stems removed, lightly packed
2/3c sun-dried tomatoes in oil, drained and sliced (couldnt find these at walmart but are always at harris teeter)

1/2c finely greated parmesan cheese
1/4c chopped fresh parsley (or 1 TB flakes)
salt, spinkle
pepper, sprinkle

directions:

Cook pasta in boiling water in lare uncovered pot or dutch oven for 8-10 minutes until tender but firm. Drain. Turn pasta into large bowl.

While pasta is cooking, combine cooking oil, red onion and garlic in large microwavable-safe dish. Cover. Microwave on high for about 3 minutes, stirring once during cooking, until the onion is soft.

Add whipping cream and broth to onion mixture. Mix

Lay salmon over onion mixture. Cover. Microwave on high for 3 minutes.

Layer spinch and tomato over salmon. Cover. Microwave on high for about 3 minutes until spinach is wilted and salmon flakes easily when tested with fork. Flake salmon in dish, removing any bones and skin. Stir salmon, spinach and tomato. Add in pasta in bowl.

Add parmesan cheese and parsley. Mix well.

Sprinkle salt and papper over pasta mixture.


Enjoy! This serve about 4-6 people.
